The best melt in mouth = Indonesian Pineapple Cookies (Kue Nastar)




I’ve always believed that it’s not really Iedul fitri/ Lebaran without the following things:
1. family + the people you love (and who love you!),
2. Nastar

And this is the recipe that i wll stick to the rest of my life. There is no need to search for  another when i¨ve already found the BEST :)

Ingredients
350 gr all-purpose flour
¼ teaspoon salt
150 gr softened unsalted butter ( i use roomboter gold campina )
100 gr Margarine Blueband
75 gr powder sugar
50 gr melk powder
3 egg yolks
½ teaspoon vanilla extract
Home made Pineapple jam
1 or 2 eggs, beaten, for egg wash

Directions

1. Sift flour,melk and salt into a bowl and set aside.
2. Using a stand mixer, butter , Margarine and sugar on high speed for 2 minutes until light and fluffy. Add the egg yolks, one at a time.. Add the vanilla and mix until combined.
3. Add the flour mixture and mix until fully incorporated.
4. Cover dough and refriegerate for about 30 minutes until firm.
5. Preheat oven to 150 C. Line several cookie sheets with parchment paper or silicone baking mats.
6. Roll the dough into 1-inch balls and place on cookie sheets, or another style
7. Brush the tops of each cookie with egg wash. Bake 15-18 minutes, rotating sheets halfway through, until shiny and golden. Cool on wire racks.
